Hello, I have an iPhone 7plus and I got an applet watch 8 for Christmas. I am completely bummed out that I cannot pair them. Can you recommend a solution? Or a patch? I am not planning to upgrade my phone yet.

If you are not planning to update your iPhone, then you simply cannot use the watch. Your watch runs on WatchOS 9. Any watch running WatchOS 9 can ONLY pair with an iPhone running iOS 16 or higher. Since iPhone 7 is not capable of being updated to iOS 16, there is no patch or magic wand you can find to use your new watch with your out of date iPhone. Sorry.
Either return the watch for refund or buy a newer iPhone are your only two options.
