in Mail I have three accounts one of which is named "google". I would like to change that name--without affecting any app behavior--to the actual email name I have, Nick...@gmail.com.
Can I do that? any reason not to?

Open Mail Settings > Accounts, select the account from the list.
On the Account Information, change the description to whatever you want.

Your entire email address will be rather large for the account header in the mailbox list.

The denotation of " Google "as the e-mail account is only making it know who the e-mail Account is with.
Example: I have two e-mail Accounts. 1 with iCloud and 1 with my ISP ( Bell )
The names appear in Apple Mail are" iCloud " and " Bell "
