OK try this

Unpair and erase your Apple Watch

On Youtube, https://www.youtube.com/watch?v=UXBcNcbTcqg&list=RDCMUCYFQ33UIPERYx8-ZHucZbDA&start_radio=1&rv=UXBcNcbTcqg&t=25

It will ask for your Apple ID password. If that is successful then they no longer have their ID on there.

If it asks for their ID then you are in big trouble. They will have to remove it. I doubt if this is the case but I want to be sure.

and then

Set up your Apple Watch

Or in Youtube https://www.youtube.com/watch?v=7rb3vX86RUQ&list=RDCMUCYFQ33UIPERYx8-ZHucZbDA&index=3
