Startup in macOS Recovery, erase and reformat the drive,
as per > Use Disk Utility to erase an Intel-based Mac - Apple Support
Then reinstall the macOS,

Try highlight the grayed out APFS Physical Storage in Disk Utility and see if you can Repair it.
To answer your last question, yes formatting the internal drive will erase everything on it.
Do you have a Time Machine or some other type backup to restore from?
If not, then sadly you may have already lost everything.
It’s impossible to say for sure.
First guess, a failing or failed hard drive.
Second guess, someone made a fatal mistake.
Best bet at this point, is to schedule a service appointment at your local Apple Store or AASP.
Try starting up in Safe Mode followed by a normal restart to see if that helps.
