What is Apple syncing to my iCloud other than my apps?

I disabled “ALL” the applications under iCloud backup but it still saying that size is. +6…Gb for some reason. I have no clue why this is happening. And also it worked really well with iPad OS 15. After updating, i feel like this is one of the many bugs.

iPad Air, iPadOS 16

Items that you sync with iCloud are not included in your backup. Once you turn off iCloud sync, those are then included as part of your device backup. Eg. If you use iCloud Photos, they sync only when your device syncs photos; they are not included in your backup. But, once you turn off iCloud sync for photos, all of your photos are inlaced in your device backup. The net result is that the same amount of space is likely required.
