The delivery time of my messages changes every day, and changes to current time when reopened. If I scroll down long enough I find messages with older dates, so it’s not every message. How do I stop it from changing the delivery date?

On your iPhone, iPad, or iPod touch
Turn on Set Automatically1 in Settings > General > Date & Time. This automatically sets your date and time based on your time zone. If a message appears saying that updated time zone information is available, restart your device and any paired Apple Watch.

Are you using any third-party Apps for messages? There are few icons missing in the pic posted by you. Please see the pic below from my iPhone 12 Pro iOS 16.1.1
I think this is Mail because I don't get newsletters on iMessages. Maybe it's a coincidence that your newsletters deliver at 3AM.
No, it’s definitely iMessages. And it’s not new messages but old that gets a new date and time every day.
No, I use the standard message app. Those icons only appear if filters are enabled in settings. If I open an message the time change again to current time and date.
