None documented.
What is being stored and how am I able to view it?
No documentation.
What specific API documentation is applicable
None.
Is it exploitable and therefore a security risk?
Proving a negative is ~impossible, and nobody posting on this has seemingly yet proved it exploitable. Or even that this is an issue, other than cosmetic.
For another series of postings on his and analytics, and that thread with no discernible evidence of issues pr exploits:
Why is the accessibility UI server on my … - Apple Community
Do feel free to communicate your concerns directly to Apple, of course.

Most likely your accessibility preferences like text size.
What specific API documentation is applicable
Here you go: Apple Developer Documentation - enjoy

Everything is exploitable and a security risk. The only safe option is to take a hammer right now and smash your phone. Then, after you realize what you've done, go buy a new phone.

A benign and ubiquitous and inconsequential use of iCloud storage for the storage of accessibility-related context, with a poor naming choice and with a busted-icon icon (also see my avatar here) being shown.
Is there a way to view the data that is being stored?
For those curious, the setting to which is being referenced can be found under:
Settings -> <apple id> -> iCloud -> APPS USING ICLOUD -> (Show All) -> AccessibilityUIServer
I have asked a few of my fellow iPhone users if they have this and it doesn't always appear.
For me, AccessibilityUIServer appears on a freshly reset to factory defaults iPhone
after navigating to Settings > Accessibility
Go to Settings > <apple id> > iCloud > iCloud Drive
Toggle iCloud Drive setting On and Off
Re-Open Settings > <apple id> > iCloud > APPS USING ICLOUD > (Show All) >
AccessibilityUIServer is now missing
My question:
What is being stored and how am I able to view it?
What specific API documentation is applicable
Is it exploitable and therefore a security risk?
