We don't like the black background to the Mail app window. Only choice now is to change the message window ONLY to white (or black). Can't change the app window itself or the massage list section. WTF??

Set Settings > Appearance to Light if in Ventura, and System Preferences > General > Light if in earlier versions of macOS. This makes everything in Mail have a light background.
