SIM card data transfers
Is it possible to move the SIM card data from two older iPhones -- an iPhone XS and an iPhone 11 Pro-- into a new iPhone 14?

No iPhone model stores any user data on the SIM card. There is no user data on the SIM to move into the new phone.
Some other brands of phones may store contacts on the SIM card and if you have the SIM from one of those phones then iPhone can import that data. see: Import contacts from your SIM card to your iPhone - Apple Support
