Is there anyway to use an extended monitor feature with a separate monitor off of my iPad Pro?

Basic screen mirroring should be available to an external TV or connected monitor with iPadOS 16.1. However, Stage Manager support for external monitors is not yet available - this feature being planned for release later in the iPadOS16 lifecycle.

Not at this time. The extended display support is coming in an iPadOS 16 update later this year.
