Can I use Apple Watch ULTRA bought in the US in UK & will it be accepting of UK Sim Card for a carrier there?

You can use it as a GPS only watch. Apple Watches sold in the US are designed to connect to carriers in the US, Canada, Mexico and Puerto Rico. If you want an Apple Watch with cellular to work with cellular in the UK, buy your watch in the UK.
