Phone was stolen in Mexico- what do I need to do- How do I shut it down, erase it, etc.

Best way to make sure they cannot get my personal date

She did report it to the police in France, Apple and her provider. The phone then did appear again somewhere else in Paris and today it’s in Morocco with a different no on the erase screen.
