My Apple Watch connects to my phone but as soon as it does it unpairs. What is going wrong

I am trying to connect my new Apple Watch to my phone. As soon as it pairs it unpairs, what as I doing wrong?

iPhone 12, iOS 15

If the watch is running WatchOS9 then your phone must be updated to ios16 or newer.
