Stolen iPhone

My iPhone has been stolen, it was pickpocketed. I have filed a complaint with the police. In find my device it shows offline since my phone is switched off. Is there any way I can track my phone back? I also want to know what will the thieves do with a locked iPhone which cannot be used again.
