Whether or not email is included within an iPad backup will be determined by the email account setup. In most cases, email is not included in an iCloud or iTunes backup - as, unless intentionally deleted, your email will be available from your email-providers mail server.
You will to verify that the email remains accessible in your email providers servers. Try logging-in to your webmail service from a web browser to verify that the email is still present in your account.

From a backup made when the email was present.
Be advised, if such a backup exists and you restore
your iPhone to that backup, everything else in the
iPhone later than the date of the backup will be
overwritten with the contents of the backup. You cannot
choose to restore just a single email.
You could try the help desk for your email provider to
see it they keep any old emails, but that is unlikely.

Export, then Import:
Ask the other participant(s) to export it from their account for you. Then, import it. It would be a participated eMail, just not your own email that you are recovering.
