Apparently my IPad Air 2 isn’t compatible for IOS16, Will I still be abe to use my IPad? Latest version 15.7?

Yes. iPadOS 15.7 is current - and will continue to be available to iPad models that support iPadOS15 after the release of iPadOS16 later this year.
