Issues with changing the "item info" in the Books tab of iTunes

I have a lot of ebooks in EPUB format that I want to transfer to my iPad Air so I can read them on the go, but I'm having issues with iBooks iOS processing the metadata. The biggest example is the two books I have by Tamsyn Muir. iBooks isn't grouping them together when I sort by author, and is misreading one of the titles, shown here:

When I go in to iTunes on my laptop (Windows 10), I can see that the problem with the grouping is caused by the sorting settings in the item info, shown here:

At first, I thought it was a problem with the EPUB metadata and not with iTunes, so I went into Calibre and made sure the author and title was how I wanted, and it was, so I don't think it's the original file. So I decided to change the item info in iTunes for "Gideon the Ninth" so it looked like this:

It ended up working within iTunes on my laptop. The titles and authors sort perfectly in the iTunes view. But it absolutely refuses to sync over to my iPad. My tablet is still showing the original sort order no matter how many times I sync my device or restart it or any of the other classic forms of "turn it off and turn it back on again."

Is there any way to make the information in iTunes Windows and iBooks iPadOS match up?
