I've been using 2 displays with my MacMini for years without a problem. Just connected two new Philips' through a HDMI splitter and now they only mirror each other. How do I separate them, so I have 2 screens worth of "real estate?"
The 2018 Mac supports one display on the HDMI port and as many as two on the Thunderbolt/USB-C ports.

What you need for the second display, is a USB-C to DisplayPort cable or a USB-C to HDIMI adapter. Plus it is best to plug the display cable or adapter directly into the Mac mini’s Thunderbolt/USB-C port instead of a hub or unsupported dock.

What year model is your Mac mini?
Identify your Mac mini model - Apple Support
You need to move one display off to the Mac mini’s other video port using the appropriate adapter in-order to have Extended Desktop Mode.
I have a 2018 Mini. The monitor came with HDMI and Display port cables; both ends are same but I'm not sure if one calls them male or female. I think they are considered male, so I would need a female to an Apple pigtail connector to fit back of MINI or my Dock.
Thank you. Apple Support has advised same as the specs for my MINI do not support more than one HDMI. Sadly, the Splitter I bought said it would work for two HDMIs. Thanks for your assistance.
