iPhone says "Unable to install update"

Ah, that’s very helpful. You can’t install an update when the phone is in low power mode (as indicated by the amber color of the battery icon). Go to Settings/Battery and turn off Low Power Mode. And also leave the phone plugged in while updating so it stays above 50%, which is also necessary when updating.
