Not seeing anything regarding Nvidia GPUs, does macOS support an eGPU with an Nvidia GTX 1080ti installed?

Yes. It fits the criteria: eGPUs are supported by any Mac with an Intel processor and Thunderbolt 3 ports 1 running macOS High Sierra 10.13.4 or later.
