You would have to download the music to the Apple Watch, or be connected to the internet to stream some music. You could be connected via cellular if you have a cellular version of the Apple Watch, or you could be connected to a known wi-fi network you have been connected to in the past. You will also need either a Bluetooth speaker or headphones to be able to hear the music. Listen to music and podcasts on your Apple Watch - Apple Support
