You would be better off selling the 3 privately.
When you buy a new Apple Watch online there is an option for trade it where you will give details about your current Apple Watch Series 3. Once your new Apple Watch Series 7 is delivered to you they'll be a box and shipping label to put the Apple Watch Series 3 into for return/trade in!
I've never done trade in at an Apple Retail Store, but I'm sure the process is somewhat similar!
