When using Migration Assistant, can you select or control what data is transferred?

Move your content to a new Mac - Apple Support

moves all of your documents, apps, user accounts, and settings to a new Mac from another computer.

How to: Restore your Mac from a backup – Apple Support

uses that backup to restore your personal files, including apps and everything in your user account.

Or

Restore items backed up with Time Machine on Mac – Apple Support

How to restore just a few files or earlier versions of those files using Time Machine.

As you noticed already, the transfer options presented to you are all files or none. So, you can either transfer all files and then delete those you don't want or you can manually copy and paste only those you want to keep.
