I have an IPhone 12 that I got this month, and I want an Apple Watch that I can make and receive phones calls and text messages. But I am not sure which one will be compatible with my phone..

Steer clear of the Watch Series 3, that one is too old in my opinion
Further: it is what you want to do with it and the height of your budget.
The Apple Watch SE is cheaper, but it is lacking a few health functions (ECG, Blood Oxygen)
If you don't mind missing out on that health features the SE is a great deal, I have the SE myself since march (before that I had an original Apple Watch from 2015) and I love it.
If you have a little more to spend I should go for a series 7 tough. (:
