My wife deletes her mail and empties her mail trash daily.
last night she was very tired and accidentally did this to her inbox, by mistake.
is there any way to UNDO this and get back those emails?

Mail is not part of any backup; it syncs to the mail server. There is no time machine in iOS. And I don’t think mail is included in Time Machine backups either, except mail saved in local folders.
