I have a MacBook Pro (15-inch, Mid 2012), 2.3 GHz Quad-Core Intel Core i7. I was wondering is there, if any restrictions on which operating system/software that can be downloaded on this device, or maybe better question.
What is the latest version of macOS that can be installed on this device?

that Mac can run up to and including macOS Catalina. and if you are going to upgrade to Catalina, please note that any 32 bit apps that you have will no longer work. you will need to update them to 64 bit versions, or replace them with comparable apps if they are not upgradeable.

Catalina 10.15.7 is the latest version it can run.

no, once a Mac is no longer eligible for macOS upgrades, nothing can be done to make it eligible again. sorry.
