I purchased a new iPhone. I have always backed up my phone to my mac. I have never used the encryption option for the backup. Somehow the encryption option has been activated and I cannot restore from backup because I don't know the password I never created.

Unless you allowed someone to use your devices or bought them used then you are the only one that can set the encryption. If you have health information on your iPhone it requires an encrypted backup.
@Jrivera2015 - Brilliant. This worked. After I reset as you recommended, the backup options defaulted back to where I remember leaving them. Thank you.
