Can I dual boot Mac Pro 5,1 with Mojave & High Sierra?

I would like to dual boot my Mac Pro 5,1 with Mojave and High Sierra. My machine is currently running Mojave and I would like to run High Sierra so I may use Adobe CS5.

Is this possible and if so how do I move forward with this?

Mac Pro, macOS 10.14

After you install High Sierra on another disk you can press the Option key during startup and then you will be present with list of disk that are bootable. You select the disk you want to startup with.

Once booted you can also select the startup disk in System Preferences>Startup Disk.
