how do I see backup history
how do I see all backup history for my iPhone and can I select a certain backup date and restore pics, texts, etc from that specific backup if they were deleted?

If you backup to a computer, the date will be on the backup. If you backup to iCloud, there is no backup history, just one backup file reflecting the most recent status of your device.
