Unpairing Apple Watch
What is the reason to unpair my Apple Watch from my iPhone? I am giving away an iPad, keeping the phone and the watch.

In this case, you do not need to unpair the Apple Watch. Thoroughly cleanse the iPad as described in the article linked above.
