Is my Keychain information shared with my family?
And if so, how can I stop if from being shared EXCEPT to my devices? They each have their own apple ids.

With iCloud Keychain, this information is all saved to your individual iCloud account so it's not shared with others. You can use iCloud Keychain on other devices that you own when you sign in with your Apple ID and iCloud information on the device if you'd like. In regards to Family Sharing, personal information isn't shared with other users as that would not only cause confusion, but would also be an invasion of your privacy. That iCloud Keychain sharing would be a complete and utter and unmitigated catastrophe.
That sharing would cause much of the internet to be filled with screaming and gnashing and complaints and clickbait.
