I have an iMac 27-inch, late 2012 running macOS Catalina version 10.15.7. Can I upgrade to Big Sur.?

In order to run Big Sur or Monterey (the current release) you would need a 2015 or late iMac. Considering your computer is now 11 years old you may want to consider replacing it with a newer iMac. You have LOTS of options available to you, if you are interested.

Unfortunately, no. macOS Catalina is the latest version of macOS for your Mac.
