Why can I not do screen sharing on FaceTime? I have an iPhone 7 Plus with the newest update and I have all the other new features.

Why can’t older phones have all the new feature on ios15?

As far as I understand it, so long as every device on the FaceTime call has iOS15.1 or later then the screen sharing is available
