Do I have to have a separate phone line dedicated to my Apple Watch for it to work?

Do I have to have a separate phone line dedicated to my Apple Watch for it to work? I have an older Apple Watch but I don’t use it because we disconnected the line. Is it possible to use certain apps as long as I have the phone next to my Apple Watch? Like Health apps and walking stuff apps?

...and a Cellular Apple Watch where you do not activate the cellular radio, will be have just like a GPS only Apple Watch. As fireyjack says, in GPS only mode the Apple Watch will do everything the cellular mode will do as long as your iPhone is nearby.

The watch uses your phone's number;

Apple Watch (GPS only) lets you send and receive text messages, answer phone calls and receive notifications when it’s connected to your iPhone via Bluetooth and Wi-Fi. The built-in GPS works independently of your iPhone for distance, pace and route mapping in workouts.
