Can I buy an iPhone in Canada and put my UK SIM card in it?

You can provided the SIM card size is the same. The recent iPhone models use the nano sized SIM card. One thing to note and the is that you will have to ensure that you buy an unlocked version of the iPhone in Canada. This will ensure that any carrier's SIM card will work with the iPhone. If you purchase a locked iPhone then it will only work with the carrier that it is locked to.
