My Mac isn't reflecting Catalina as a software update option, how do I upgrade to 12.1 from 10.13?
iMac 27″ 5K, macOS 10.13

Back up your data, check your applications for compatibility, and click on Mojave, Catalina, Big Sur, or Monterey. They're full-version upgrades and won't appear in the Updates list.
Catalina is 10.15, and Monterey is 12.
