If my MacBook is with macOS Catalina, will it see an iPhone with installed iOS 15 (including the new iPhones, like iPhone 13, and the old ones, like iPhone 8)?

Yes.

Confirm the iPhone's Connection:

First off, see if the microphone is even seen:

Hold Down: the Option key
Click: the Apple menu
Choose: System Information or System Report
Select: USB or Bluetooth from the list on the left
Look For: your iPhone
