Updating my Mac to Monterey and it’s stuck with less than one minute remaining on the update? What do I do with this?

AntiVirus Software should be removed as per Developers Instructions. They are unneeded, cause havoc and interfere with the normal operation of the OS including the download and installation of Monterey.
The Built in Security is all that is required.
There are no known Windows-like Viruses in the wild that self replicate and affect macOS because of the underling UNIX Foundation and Permission Limitation.

What specific model and year Mac do you have?
Do you have enough free disk space?
You need 45GB or so if upgrading from a previous MacOS version.
Do you have an Apple SSD installed? For some Macs the upgrade includes an update to the Mac's firmware and Apple check if an App SSD is installed.
I’m not sure, I didn’t look at that before I started the update? It is an older version probably bought back in 2016 or so? So if I just shut it down will it come back up with the old operating system or am I going to have problems? The main reason I updated it is because my Microsoft updates wouldn’t load because it said I needed to update my iOS system
There are factors:
1 - Like poor Wifi connection
2 - Slow wifi connection
3 - Too many other people downloading at the same time and Apple Severs are overloaded
4 - Software on the computer interfering with the download process including AntiVirus Software
5 - Running behind a VPN which may increase Packet losses
6 - If via wifi too many Other devices using the wifi at the same time reducing the Bandwidth to your computer.
7 - Best Results are via Ethernet Cable to Router

Apple's notion of what 1 minute remaining means in wall time is inaccurate and you may be looking at more time before it reboots itself and then tells you it may take another 18 minutes. Do nothing. Be patient and let it finish the upgrade. Forcing it to quit could trash your drive contents and end up with an unbootable Mac.
I have not installed any additional antivirus software. So I should only have the built-in one that came with the computer.
