IOS update
My iPhone XS Max says my software is up to date but I’m still running IOS 14.7 so I know that’s incorrect, so why doesn’t it show the newest update and how can I fix this?

Remove the beta profile from it. If there isn't one, check that it can properly communicate with Apple's servers.
