How can I find my history of devices i've used

I do not know of any such list directly accessible. You can see a list of ones currently signed in under your Apple ID which may include some you have forgotten to remove.

For most of mine I look through old manuals I have, as well as floppy disks that remind me I used an SE (yes, the original one back in the late eighties) many years ago with OS6. Until a year or so ago I just looked in the basement until I finally decided that old IICx was probably never going to be used again.

There is no such history saved anywhere. You can see the devices currently signed in with your AppleID. But that is it.
