On Catalina, Sign in with your Apple ID in App Store, then in Account, you can see the apps which you have purchased before. Then you click the download button for Pages, for example, a dialog pop like:
"Download an older version of Pages?
The current version requires macOS 11.5.1 or later, but
you can download the last compatible version."
Then click the Download button.

Didn't work for me.
Apple seems to do their utmost to force you to upgrade and this is just another example.
Fortunately for me, I can still access pages documents on my iPad and export them to Word if I want to see them on my 2012 MBP (which won't run OS11)
Hi Andrushavojd, there is a way to load an older version of pages, if (there is always an "if") you have downloaded it before.
You will find the older versions of pages in you account history in the App Store.
Open the App Store, just click on your name and/or photo to find all older downloads you had. There is pages, too. By clicking on the download-button (the cloud with the arrow sign) you will be informed that this is an older version and if you really want to download this old stuff... be happy and press "OK".
Done.
Whatever you do, don't upgrade to Big Sur. I did and suffered. Had to send my mac to the Switch shop for a fix and get it reverted to Catalina.
With the recent update to v11.2 of Pages, Numbers, and Keynote for Mac, they now require macOS Big Sur or later, and cannot install on Catalina or older versions of macOS. Apple does not provide full installers for older versions of these applications, so the only option you have now is to use the iCloud versions of these applications, or if iOS/iPadOS 14.8, or 15.0 are installed.
If your hardware supports it, you might also consider upgrading to Big Sur to solve this application version issue on macOS.
