My iPhone 12 is not changing to landscape when I turn it sideways. How do I correct this?

Not everything can rotate. If nothing does however, from the top right hand corner of your iPhone swipe down to open Control Center. Look for an icon with a lock in it. If it is red, tap and you will now be able to rotate those apps, etc., which can rotate.
