I forgot my passcode so my phone is disabled I tried to update it by itunes and phone screen wenty to attempting data recovery ,it was loading the same procedure 3 times the same way so I quickly pressed volume up at once than volume down and then home button to restart it and now screen turn to Iphone disabled try again in 60min

You can't, it is too late. You will have to rely on your backup.
I dont want to lose anything so how can I save everything and start my phone?

What do you mean? Your iPhone is now disabled, it is too late to back it up. Prior to it becoming disabled you would had to have backed it up. If it didn't work you should have fixed that first.
I’ve tried to back it up but I couldn’t so I uploaded instead because there weren’t any other option excluding restore

I think you had a problem with your iPhone even then.
No, you do a backup BEFORE you have a problem, you can't do it after.
