My Apple Watch is not showing or sharing its data with my phone, or the Health app. How can I get it to sync?

Only some of the categories update on my Health app . I see online this is a problem with other people , why has the Health app not had a corrective update , ?? if I unpair my watch and phone , I may lose the data I do have already. i did all of the steps in your answer.

This did not fix my issue either. My health app stopped recording data after I updated my phone and watch with IOS 14.8
