someone stole my Airpods pro on 07/17, I was able to locate the last location but two days a go the Airpods are not there anymore in find my devices. My question is can I track my Airpods using the serial # since I still have the box with me?

You can find the last known location of your Airpods using Find My, however, it will not update until it connects to your device. You are unable to track them via the serial number, as they are no longer appearing in your devices, they are gone.
Apple does sell replacements, where you can pay to replace one individual Airpod and you can look into it here AirPods Repair – Official Apple Support
If you have lost both your Airpods and/or case, it might be more economical to buy a new set.
