I ordered my daughter a new iphone 12. It came today- we're baking up her iphone x, do we switch the sim card or just log into her icloud with the new phone once her back up is done and everything will be transfered??

On Both iPhones: Enable various iCloud items.
Switching the SIM card is the easiest way to transfer her phone number to the new phone, as the SIM is the reference source for the phone number. There is no other data stored on the SIM.
