Apple Watch storage
I can’t get rid of any storage on my Apple Watch. No matter how much I delete my storage level never changes. What should I do? I need to get rid of storage to make a software update.

Check in here - especially as it sounds like you have the S3 GPS only model? In that case unpair & re-pair is needed twice.
