ios14. iphone STILL continues to randomly select some ridiculous kind of photograph instead of just the normal one, whenever I turn on the camera app. Surely they have solved this problem by now!?

Settings, Camera, Preserve settings. ensure Camera Mode is turned off and it should reset to Photo each time you open the camera app.
Close the camera app after use, even though closing apps is not recommended I make an exception with Camera.
