do i have to like charge my new iphone 11 overnight/24 hours before using/setting up the stuff?

No. There is no requirement or need to charge it for any specific length of time. You can use it immediately out of the box usually.

You can if you like. I have always found that each new phone came with more than enough juice to set it up and start using it.
