Hi. Maybe a really silly question as I don’t believe it really what I’ve been told that is the iPhone Xs really waterproof? So if I was to drop it in water or take a pic underwater can that really be don’t with all the open holes on the phone? I.e charging point/speaker/mic

While Apple’s marketing states that it is water resistant, no amount of water damage is covered by the warranty. It is in no way waterproof.
I thought so but when you read online it says you can for upto 30mins and upto 3ft. Just did not sound right to me.

No, it doesn't say you can. It says that's what it's certified to. That certification is NOT for real world use. It's laboratory testing under controlled conditions.
